Easy Banana Oat Pancakes

Got a ripe banana? And some oats, milk & cinnamon? Then you can make some simple PANCAKE batter in a blender!

I don’t know about you, but I’m not into recipes with a bunch of ingredients. I’m all about quick & easy creations. These pancakes fit that category for sure!

RECIPE (not exactly precise):
• 3/4 C GF Oats (Really important your oats are organic as they are a heavily sprayed crop!)
• 1/4-1/2 C Nut Milk (I make my own with just 1 C soaked nuts, 1.5 TBS vanilla, some sea salt, & purified water)
• 1-2 Smashed Ripe Banana(s)
• Add spices or flavors as desired; I added Ceylon cinnamon, Pumpkin Spice, & Vanilla.
• Sometimes I add 1/4 tsp Baking Soda, but it’s not required

• Blend all that up & put it on your hot but less toxic griddle (aka teflon is toxic) with your choice of “grease”; I used Coconut Oil spray without propellant. Flip those little medallions of pancake love when the edges have firmed.
• This recipe proportion made 4 small medallions. I top mine with almond butter, cinnamon, shredded coconut, chia seeds, and all the anticancer berries my plate can handle.

The cinnamon helps counteract the BLOOD SUGAR upper from the banana. The almond butter & coconut adds GOOD FAT to also help slow down the glucose metabolism of the natural sugars. Chia is an OMEGA-3 that helps with heart and brain health along with being packed with PROTEIN & FIBER (again reducing the net carbs of the meal) and helps ESTROGEN METABOLISM. These pancakes won’t taste like white flour, junk filled cakes. They will have the hint of banana and will be more nutrient dense than many store bought pancake powders.

I love a slow morning sipping my homemade Pique Tea Latte and enjoying breakfast. Making pancakes is one of Mike & my favorite things to do together.
